Asian Sticky Wings

There’s a lot that I cook and I actually don’t eat. With my autoimmune conditions I am really trying to be good and sometimes as tempting as some things are we have to resist. I guess we can’t stay young and carefree forever. Now it’s all about discipline and taking care of our health. When I look at my mum and dad and see how age is now seriously taking a toll on them, it does scare me. My dad is almost 80 and was just admitted to hospital for the first time in his life. He was admitted for chest pains but he also tested positive for Covid. They’ve been really good about staying home and being cautious.  My dad decided to go to the shops a few days ago so not sure if he picked up the virus then. Luckily he is ok with no Covid symptoms. However, I am a little stressed about my mum. She hasn’t experienced any symptoms herself but she has been tested and we are hoping she is negative. To be really honest I haven’t been affected much by Covid, until now. I am someone that always stays positive and I take one day at a time. I also prefer being home with my family. I am not a social butterfly, who would have guessed…haha! So for me staying home and keeping busy is something I enjoy. I really am a simple, uncomplicated person and it doesn’t take much to keep me happy. My boys like being on the move but they’ve also been quite good the past year. I always try and make them understand their are people so much worse off than us so we should be grateful for what we have. Please avoid large gatherings and keep yourself safe. It is scary with the numbers rising again so let us all take care of ourselves and our families as best as we can.

How to make Asian Sticky Wings

The good thing about these wings is that it is baked in the oven. There’s also not much effort that goes into cooking them. Don’t we love things that take little effort. You basically mix all the ingredients together and marinate the wings. After an hour you spread them on a tray and bake. They will be tender with a beautiful brown, sticky glaze. Mine baked for about 55 minutes. The meat should be tender and the wings will have a slight char on the edges. I love sticking to ingredients that I can easily find in my pantry. It irritates me and so wasteful when I have to buy and ingredient, use a teaspoon of it and never use it again. Asian food is not something I cook often so it doesn’t make sense to buy tons of ingredients just to use it once. 

Soy Sauce

Usually I use a regular soy sauce in Asian dishes.  Dark Soy Sauce can be quite intense in flavour. However, I did have some Staffords Thick Soy Sauce at hand and I used it for this recipe. I think this soy sauce worked well but if you can’t get some then I suggest you use regular soy sauce. I have tried other brands of dark soy sauce and some of them were quite intense.  Please use your discretion here.
