It’s my favorite time of the year, it’s finally Fall here in North Carolina. The days are shorter, the weather is cooling down and finally, the trees are changing color. It’s beautiful around. I love how the festive spirit, here in the US during this time of the year. The stores are stocked up with everything Pumpkin - pumpkin latte’s, pumpkin pies, spice mix, decor & accent pieces, aromas, produce, apparel etc. The one thing I make very often during fall is this Autumn Salad. After enjoying the citrusy summer fruits, we love the crisp sweet apples and pears. We wait all year around to relish pomegranate, the little red seeds are a burst of juice in the mouth. Ofcourse, the fall nuts and seeds are so comforting too.
What I love about this salad is that it comes together so easily and is always a crowd pleaser. A perfectly tasty side to go with any meal in fall. Some of my friends actually request me to make this Autumn Salad for them every fall. I like the use of seasonal fruits like apples, pears, pomegranates. The nutty taste of pecans or walnuts can be best enjoyed this time of the year and the tongue-tingling poppyseed dressing totally enhances the deliciousness of this salad. I love this salad for its flavors and textures. It’s sweet, tangy, crunchy and very crisp. Not all of the ingredients are must-haves, you can make your own variation from the ingredients that are easily available to you. Paneer also known as Indian Cottage Cheese is a nice twist on this Salad. If you are a vegan try using vegan fetta or tofu. The next time I make this I would love to try the Cranberry Ginger Vinaigrette on this salad. I am sure that would be an interesting combo with fresh bold flavors. However this time I am using the classic Poppyseed dressing to with it.
I still remember the first time I made this salad and posted a picture on the blog. OMG, we have come a long way since then. I remember posting an atrocious picture of the salad, dark- taken by my phone with shadows in yellow light. Oh, my!!!! The picture just didn’t do any justice to the delicious salad. So I made this salad again for our contribution to Target Made Me Do It, and edited the old post with newer pictures. What do you think?
