Baked Beans with Sausages

I think it’s a Breakfast, Lunch or Dinner kind of meal. It’s good for anytime of the day, at least in my books it is. It has been a while since I made some because I struggle to find good sausages in Johannesburg. I prefer the spicy ones and so far I have always been disappointed. For me it is all about quality and I don’t mind paying a little more if it meets my standards. The sausages that I used for this dish are spicy lamb sausages. The quality was ok, but my kids say it wasn’t the best they’ve eaten. Due to my thyroid condition I am not allowed a lot of soya products but I sometimes add that. I don’t eat lamb but I had a taste of the baked beans and that was super delicious. Considering there wasn’t a lot going on in this dish it was filled with flavour. Although I do try a lot of different recipes I always go back to the “Durban” style of cooking. It’s where I was raised and there’s something comforting about cooking like my mum did. Ingredients Required for this dish You need a few basic ingredients for this dish. Isn’t it great when you can make a dish without stressing about getting those extra ingredients from the store. The sausages can be anything you prefer and then you will need a can of baked beans, vegetable oil, onion, chilies, curry leaf, garlic paste, masala, Kashmiri chilli powder, turmeric, tomato and salt I promise you don’t need every spice in your cupboard to cook a great dish.

How to cook this dish

You will need to fry the sausages first.When frying the sausages you add a little water in a pan and allow the sausages to steam a little. Once the water dries up you then allow it to fry/grill until it’s a lovely golden brown. The reason you allow it to steam in the water is that it helps preserve the moisture and that gives you juicy sausages. I learnt this method from my mum because I always saw her cook sausages that way. And it does work. To cook the baked beans you use the same pan as the sausages. Remove any excess fat, you can leave some of the oily bits behind. This does add that little extra bit of flavour. If it’s too fatty then wipe the pan and add your oil to it. You then add your onion, chillies, curry leaf, garlic as per method below. Add your spices, tomato and once tomato is cooked add your baked beans. You then return the sausages to the pan. You can add some boiled eggs to the dish should you prefer. This dish cooks really quick so you can have your meal in a jiffy.
