Banana Chocolate Nut Muffins
These muffins I guess are not too bad. I think they could pass as healthy. After all it is filled with good stuff like bananas, walnuts and dark chocolate (wasn’t dark chocolate supposed to be good for you!!!) . That sorts the guilt out….haha! Give me a muffin, with a smear of butter any day and I’m happy. It’s so comforting to wake up to the smell of freshly baked muffins. Especially after last night’s fish dinner, my home smelt like a fishmonger. Freshly baked muffins and a diffuser quickly sorted that out. Now my home smells amazing. Most muffin recipes are pretty basic recipes that you can add anything you want to it. That’s what I love about muffins.
It is also something that you really put together in a jiffy. I am sure you are tired of hearing this advice. But I have to remind you or my job is not done. Once you add your flour the trick to making those light muffins is to not overmix the batter. Overmixing knocks out the air from the batter creating a dense texture. Don’t worry I’ve done that a few times myself. The addition of the walnuts and sugar topping gives the muffins a lovely crunch, soft on the inside and crunchy on the outside. These Banana Chocolate Nut Muffins can be whipped up in just a few minutes and they also make great lunchbox treats.
