Bread and Butter Pudding

One of my followers requested this Bread and Butter Pudding recipe. I wanted to post it before Easter but I didn’t have the heart to post recipes. My best friend, who’s been my best friend since high school, lost her husband. It all happened so suddenly I still can’t believe it’s real. It is one of the most devastating news I’ve had in a while. He was fit and healthy and had such a zest for life.  I remember my friend’s husband with a smile on his face, always. My friend and I live in different provinces but we speak to each other on the phone at least twice a week, sometimes more. To me she is more like a sister. She and I have been loyal friends for more than 30 years and I love her to bits.  My friend is the gentlest soul and to see her so broken breaks my heart. You know when you feel so heartbroken for someone but there’s absolutely nothing you an do to make the pain any less. It really is a helpless feeling and I know no matter what I cannot change things for her. We always speak of our dreams and I know she had so many more to fulfil with her family.  Her husband was her everything and I don’t know if my friend will ever be the same again. I pray God gives her the strength to cope and heal. We take our loved ones for granted, I know I do at times. I’ve realised yet again how short life is and how things can change in the blink of an eye. Cherish your loved ones and make everyday count. There’s so much sadness in the world right now so live everyday like it’s your last and never take anything or anyone for granted.

This is one of my favourite treats. If you are a carb lover, like myself,  then this recipe is just for you. I remember my cousin always made this bread and butter pudding for us when we were still kids. She was an amazing cook and loved experimenting in the kitchen. She didn’t use fancy ingredients to make it then. She used pantry basics with normal store bought bread. We are taking this one up a notch with some brioche bread and a dash of cream. You can use croissants or any bread you prefer. With Easter just around the corner I have seen loads of recipes using Hot Cross Buns too.  This pudding is perfect for cold, winter days. It really is comfort in a bowl. I love it warm with a drizzle of cold custard. I am not fancy and it does not take a lot to make me happy.

Ingredients Required for this recipe

I bought a loaf of brioche bread and it was going stale so I used that to make this pudding.  You will also need, eggs, milk, fresh cream, cinnamon, vanilla essence and of course butter. It is a bread and butter pudding after all. The raisins is optional. At least in my books it is. I am not a raisin lover but I added a few just to make it look aesthetically pleasing.

How to make it

There are different methods to make a bread and butter pudding. Yes something so simple can easily become very complicated. Growing up the way we made it was to butter the bread on both sides. Stack it in a dish, after cutting them up in triangles. The custard was then poured over, allowed to stand for a few minutes and baked. All the recipes I see off late is where the bread is cut into little cubes or broken into chunks. It is then mixed into the custard mixture and placed in a dish. Either method works fine. The second option is guaranteed to get all your bread properly soaked in the custard. The first one may be a bit tricky as you could end up with some dry bits of bread. That’s if all your bread is not properly submerged into the custard. I didn’t cut into triangles nor did I break up my bread. I cut my bread into rectangles and placed them in a dish. This way it looked pretty and worked for me. The top of the bread also had a beautiful crispness which I loved. However, you will have to use your discretion with this one. Baking the pudding I allowed my bread and custard to stand for 5 minutes before popping it into the oven for 25 minutes. After it is removed from the oven allow it to stand for about another 5 minutes before serving. The pudding can be served with ice-cream or custard. Once it slightly cool you can also sprinkle some icing sugar on top.
