What is Breakfast Rice Porridge
There are lots of variations of this recipe across the globe but I like to keep it simple here. This breakfast rice porridge is nothing but leftover rice cooked in milk (vegan option given below) , flavored with cinnamon or cardamom, sweetened with dates and maple syrup and topped with fruit fresh fruits and nuts. Sounds delicious and easy isn’t it? Ofcourse if you don’t have leftover rice, you can just make this rice porridge from scratch too.
A great way to use that left over rice. It’s quick, easy and simple. Dump and stir, no babysitting. No fancy ingredients required, made with easily available ingredients at home. It’s filling. Naturally sweetened, no processed sugar. It’s so versatile that you can never get bored of it. An easy breakfast recipe that you can enjoy all year round. It can be made in an electric pressure cooker or even on the stove top. Perfect for those busy morning when time is crunched for school and work.
How to make this Breakfast Rice Porridge in Instant Pot
This is just a gist of the recipe, you can find the detailed recipe with measurements in the recipe card. Step 1: Throw in the milk, leftover rice (brown, white, sticky), dates and cinnamon. Close the lid and seal the vent. Step 2: Pressure cook on high for 6 minutes, irrespective of the rice you use. The rice you are using here is already cooked so 6 minutes if just perfect to get the right porridge consistency. Manually release the pressure. Step 3: Serve it warm or allow it to cool and garnish with fresh, dried fruits, nuts or seeds.

It doesn’t matter what rice you are using, white, brown or basmati as long as it doesn’t have any salt added to it, you should be fine using it.
Can I use something else instead of leftover rice?
Yes, you can use leftover quinoa or oats for this recipe. They turn out great too.

Yes, you can make it with any plant based milk, soy, nut milk or even coconut milk.

How to store this Instant Pot rice porridge for the week?
When I am cooking rice in my Instant Pot (recipe here), I always tend to make some extra. Then I make a batch of this porridge, allow it to cool and store it in a refrigerator for upto a week. On a busy weekday morning, all I have to do is either warm it or simple throw in the toppings and some milk. The porridge does thicken up once it’s refrigerated or frozen.
Is this porridge freezer friendly
Yes, this porridge can be stored in the freezer for upto a month. When you want to consume it you have it thaw it in the refrigerator overnight and then add in a little milk to get the right consistency. If you like it warm, you could even heat up the porridge.
