What I am even more grateful for is the overwhelming amount of comments and kind words I’ve received. So many kind poeple with so much good to say. I read and respond to every one of them and every single one means the world to me. I hope to continue bringing you quick and easy recipes. Here’s to another easy recipe, Brown Bread Rolls. This recipe can be made into a loaf of bread too. If you have a look at my white bread recipe you will get some tips on how to turn it into a loaf. These rolls are soft, healthy and delicious. Brown flour will never be the same as using white flour in rolls so although these rolls will be soft I cannot guarantee it will be as soft as white. However, you can omit a cup of the brown flour and use white bread flour or all purpose flour instead, that may produce a slightly softer result.
It has a tiny bit of sugar and butter but I don’t think enough to do any damage. However, you can substitute the butter for some oil. I didn’t add any milk, just water to keep it as healthy as I could. I made them into sort of oval shaped bread rolls, but turned out more round that oval after it baked. You can make them round or like hotdog rolls, whatever you fancy. Sprinkle some seeds on top for a little added benefit and you good to go. The softer your dough the softer your Brown Bread Rolls will be so if you find the dough super soft but not sticky then that dough is perfect. Brown flour also absorbs a lot more moisture than white flour so please keep that in mind. I cannot stress enought about altitude and weather and how it affects the amount of liquid we use. You may need to adjust yours a little depending on where you live but the amount given in the recipe worked perfectly for me in cold Johannesburg.
For really soft dough I prefer to use an electric mixer. It will be a little more difficult to knead by hand but you can oil your hands and that will help with the kneading. I kneaded for 7 minutes in my mixer but by hand it could take up to 10 minutes. When removing the dough from the mixer, again oil your hands a little so it’s easy to handle.
