Our carrot ginger soup cooks up fast and easily in the Instant Pot. This makes it a very good choice just about any night of the week because it is ready in less than 30 minutes. You’ll love this one-pot meal and so will your family. It is filling and well seasoned, which means if your picky eaters will enjoy digging into this soup.  This soup is also great for people looking to do a detox of your system. The ginger has several natural health benefits and the carrots are a healthy source of fiber and other nutrients.

Ingredients for Carrot Ginger Soup

When making this carrot ginger soup recipe, you’ll need:

Butter - You could use olive oil to keep the soup vegan. Yellow onion  - A white onion will also work for this. Aromatics - You’ll need both garlic  and ginger. Carrots - We use fresh carrots for the best flavor, but you could use thawed, frozen carrots instead. Vegetable Broth  - The vegetable broth adds some added flavor, but you can use water instead. Spices - You’ll need  a bay leaf, cinnamon, and salt.

To garnish each bowl of carrot and ginger soup, you’ll need:

Coconut or table cream Freshly cut chives or parsley Crushed black pepper

We love to pair carrot soup with ginger with toasted Ciabatta slices from our homemade recipe and steamed broccoli.

How To Make Carrot Soup with Ginger

First, set the Instant Pot on saute mode and melt the butter or warm up the oil in the inner pot. Next, add the bay leaf, cinnamon, onions, ginger, and garlic and sauté until they soften. Once the onions are ready, add in the carrots, salt, broth or water and give it all a quick stir.

Close the lid, seal the vent, and then pressure cook for 10 minutes followed by a natural pressure release. When the safety button drops, open the lid carefully and then blend until smooth using a hand blender . If you don’t have a hand blender, you can carefully pour the carrot and ginger soup into a stand blender, blend on high, and then pour the blended soup back into the Instant Pot after blending. Once smooth and blended, pour the soup into bowls, garnish with coconut or table cream, crushed black pepper, and chives or fresh parsley. Serve along side your favorite bread.

To reheat, thaw the soup overnight in the fridge and then either warm on low heat on the stove top or pour into a bowl and microwave for 2 to 3 minutes or until warmed through.

How To Make The Carrot and Ginger Soup Creamy?

At the end, we add either table cream or coconut cream. The addition of cream gives the carrot soup a creamier texture and flavor.  It also helps to really blend the soup well with your blender. This helps release the fiber in the carrots, which can help thicken the soup a bit. For added creaminess, use butter instead of oil. The butter adds some flavor and helps to make the soup taste a bit creamier.
