Cashew and Coconut Cookies

I promise I have tons of recipes to load but I just cannot keep up with all the work. So much for thinking I am still young…Lol! My heart tells me that I am still very young but my body tells me differently…haha! I have really been struggling with fatigue of late. Thus far I have been lucky because my fatigue has been under control. Apart from the fatigue I am in good health otherwise and for that I am grateful. I still have a lot to accomplish in this lifetime so I’m not going anywhere for a while.  My kids think I am crazy at times because I have become so involved with social media. They thought it was only for the young but I am proving them wrong. It’s not always a happy place to be but I have also realised it is about my mindset. I can allow people to make me miserable or I can ignore and focus on why I am there. I am there because it gives me a purpose. It brings me so much joy to inspire women and help them become the best version of themselves.  For the longest time I felt like an outcast. I felt like every other woman was better than I was, more beautiful, had better lives. That is no longer an issue for me. I have finally accepted that I am worthy and have learned just how important self-love is.

I always watched how rich people looked down on people that didn’t have money. For the longest time I despised rich people. Over the years my opinion has changed because I have seen good rich people too. The ones that embrace and respect people from all walks of life. My husband has given me the opportunity to live the life I could only dream of. But I am still wary of spending money and being flashy.  It also doesn’t stop me from working hard and earning my own money. I want to always stay humble no matter how much money we have.  Lets get on with my cookie recipe. This is nothing fancy so no major instructions here. It is a simple, yet delicious recipe. If you ever bake cookies please don’t eat them the same day. For me cookies only taste good the next day and even better after a few days. If you don’t believe me try it.

How to make the cookies

This is a basic method. You beat the butter until creamy and add the sugar and beat again.  Remember butter must be soft but still be slightly cold when baking these cookies. It’s what gives the cookies that beautiful flakiness. Also remember to toast your coconut and nuts. It helps with the crunchiness. I used one cup of cake wheat flour for these cookies but you may require a tablespoon or two more at times. The dough must be firm but not crumbly. This will allow your cookies to bake without spreading.
