I promise you trying to promote yourself on social media is exhausting enough, it is emotionally draining. I always wondered if I was cut out for this world of social media and I must admit it doesn’t make me happy of late. I’m just tired of the facade that everyone puts up and all the perfection they try to portray. I wish our world was as perfect as social media portrays it to be. It’s a rat race that I am not enjoying. But I have a blog to promote so I have to turn a blind eye to the facade and carry on. I have to keep reminding myself the reason I have a blog, to help others and for my love of food. Now for some Cereal Pancakes.

These are almost exactly like my Crumpet or as some know it, Flapjacks, recipe. This time I just added a half cup of buttermilk, it did make it a little more pillowy but really it’s not a significant difference between the two recipes.  I promised my 11-year-old I will make him some and when you make a promise you’ve got to keep it. You should have seen his face light up when he came to the kitchen this morning…it made this pain in the neck pancake making worth it. Yes I say pain in the neck, because I hate making finnicky things. This was so painful, standing there piping out these hundreds of little things. It is a lovely recipe and I love pancakes, I just don’t like making “little” food…Lol! I’m always bragging about how easy my recipes are and here I am saying the complete opposite. So much for promoting this recipe. In all seriousness if you love cooking and baking you won’t mind the little extra effort. It wasn’t that bad, a little therapeutic I may add. One thing’s for sure your kids will love you for it. When you see their faces light up it will all be worth it. You can even add some sprinkles when cooking the pancakes to make it extra fun for the kids. My little one just sprayed a whole lot of cream, added some sprinkles and poured a whole bottle … haha… of maple syrup over. He was in heaven because this is an occassional treat. I saw some poeple say add milk, I don’t think so. Who wants to eat soggy pancakes with milk, no thanks.

If you don’t have buttermilk  for the batter you can use just milk. It will work fine and won’t affect the softness of the pancakes. If you’ve tried my crumpet recipe you will know. I also know this recipe calls for a little extra baking powder but it makes all the difference to the texture.
