Chicken Gyro with Tsatsiki

I love loads of lemon in my Greek food. It must be all those lemony flavors that keeps taking me back. If I can’t have Indian food give me Greek food any day of the week. This may not be the authentic way, I don’t know the authentic way but I think it’s close enough. As long as it tastes delicious I’m not going to complain. My boys and I are the only ones that eat chicken at home so this was enough for us. In fact we still had leftovers. However, if you are feeding four adults you may want to double the recipe.  

Chicken

You can use chicken thighs or breasts for this recipe. My kids don’t like the fattiness of the thighs so I usually use chicken breasts in my dishes.  For this Chicken Gyro with Tsatsiki recipe the chicken can be marinated for an hour before grilling or frying. If you have a cast iron pan you can use that too. I do have one but I never use it, don’t know why.

 

Pita Bread

The Chicken Gryo is usually served with Pita Bread. However, I took the easy way out and used my Tortilla Recipe. This time I made them slightly thicker and they worked well for this recipe. I do have a Pita Bread recipe. I just haven’t perfected it as yet so will post one soon. If you want to make your own you can try this recipe which seems to have great reviews. You can use store bought pitas or any flatbread. You can make the tsatsiki ahead of time and refrigerate it. Tsatsiki is very similar to our Indian Raita.  What better to serve these Chicken Gyros with than tsatsiki and greek salad…it was totally yum!
