Chicken Prego Rolls

The sauce for the prego rolls was so delicious, it was a little spicy with a hint of lemon and garlic. It was perfect. If you haven’t heard of prego rolls before, you are missing out. It is another Portuguese Recipe, like my Peri-Peri Sauce. It is made of succulent pieces of chicken, that’s cooked on high heat, for that little charred bits, and stacked on top of soft, delicious Portuguese rolls. There’s no cooking involved in making the sauce. You have to marinate your chicken in the sauce for an hour and fry your chicken on high heat, using a griddle pan or barbecue/braai if you prefer. I used a griddle pan and cooked each breast for a minute and a half on each side until is was slightly charred. It was perfect. I drizzled a bit more sauce once it was cooked. You are going to love the Chicken Prego Rolls, you can thank me later. I made sauce enough for 8 chicken breasts or if you want you can use it on a whole chicken. Always set aside a little bit of sauce to baste the chicken whilst frying or to drizzle after it’s cooked. One thing is for sure I am never buying Prego Rolls again. I will post the recipe for the Portuguese Rolls soon. I tried to keep the recipe simple although there are more complicated ways to make Portuguese Rolls. I got a few tips from some professional bakers so that helped. If you’re not up to making your own bread rolls, store bought will work just as well. Although I added Harissa Paste to my recipe for the sauce you really don’t have to use it. You can leave it out completely and the sauce and add a little more peri-peri sauce, will still taste delicious. It does add a little extra flavor to the sauce but won’t really ruin the recipe if it’s not used. I also used my homemade Peri-Peri Sauce in the recipe but store bought Peri-Peri Sauce will work fine.
