Creamy Chilli Garlic Prawn Pasta
One thing’s for sure if I’m having a bad day this Creamy Chilli Garlic Prawn Pasta is sure to lift my spirits. This is one time where I can stick to cooking one dish and everybody eats it without a moan. That’s rare in this house, a bunch of picky eaters I have.
Prepping the Prawns
If you have tried any of my other prawn recipes you would know that I always add course salt to my prawns and rub it in. It helps take away all the yucky stuff. I then rinse it a few times. I hate chewing on a prawn and it tastes like sand…yuck! You will then need to squeeze all the excess water out. I have mentioned this before. Trust me this is what makes the difference between well cooked and rubbery prawns. The more liquid in the prawns the longer you tend to cook it, resulting in prawns that are chewy and not so nice to eat. We don’t always find great prawns on this side of the world. Usually we have to drive miles to get some half decent prawns. A friend got me some of these prawns and I must admit they were amazing. It’s been a while since I bought prawns that actually looked good and was a decent size too.
Chilli Hot
We absolutely love a bit of heat in our dishes. It’s why I added some birds eye chilli to this Creamy Chilli Garlic Prawn Pasta. It was not burning hot but let’s just say it has enough heat to make you sweat a little, that’s if your palate is not used to chilli. You definitely can omit the birds eye chilli and use a more subtle chilli if you wish. I know garlic is not always a good idea but as long as you not going on a date the garlic is perfect…haha! When I cook prawns I love frying my prawns first and then I use the same pan to add my other ingredients. The reason for this is that you get that extra burst of flavor from the prawns when done this way. For this dish I marinated my prawns and fried them in some butter. I added more butter to the same pan and cooked my sauce, that way there was loads of flavor in this dish. You can use half cream and half milk for this dish, all cream if you wish or milk on it’s own. I have tried it all and the dish still tastes amazing.
These Prawns can be served on a baked potato or with some crust bread too. Nothing better than to mop up all that delicious sauce.
