Creamy Mushroom Pasta
This Mushroom pasta is so good. If you are missing the meat on your vegetarian days this dish more than makes up for it. It has a meaty flavour with some smokiness, from the spanish paprika. Chilli in my books, always adds a nice kick to almost every dish. And this dish has a fair amount of chili.
Ingredients Required
For this dish I used 150 grams of exotic mushrooms and 250 grams of portobellini mushrooms. You can use just portobellini mushrooms if you prefer. However, the exotic mushrooms does add more “meatiness” to the dish. I used penne pasta for this dish. However, you can also use macaroni, it will work fine. You will also need a few herbs and spices, chillies, butter, flour and milk. Of course some cheese because how can you have pasta without cheese.
Just because… I am the queen of simple recipes I have kept this recipe as fuss-free as possible. Unfortunately if you are cooking a dish there will always be chopping. Unless you have a sous chef to assist. However, I tried to cook most of the ingredients in one pot. The only other pot you will need is to cook the pasta.
When cooking pasta there is no need to add oil to the pasta water. Which I know many people do. You should place your pasta in rapidly boiling water and immediately swirl the pasta around. This will prevent the pasta from sticking to the pot. The sauce adheres to the pasta better if there is no oil added to the water. Pasta water is liquid gold. Always reserve some to add to your pasta dishes. It’s the pasta water that makes your sauce silky and delicious. If you are not serving your pasta dish immediately you can also reserve some of the water to add to the dish when re-heating.
