Easy Chicken Souvlaki
I didn’t have to cook two different meals as my hubby went out to a business dinner. It makes life simple when I don’t have to make two different protein. We will save some of the pita bread and Tzatziki for him. My hubby loves all the little dips and pita bread. My kids are not fans of Greek food, they think it’s too lemony. I love everything lemon. However, I did convince them that eating all of the elements together does make it more interesting. And they did. For once they listened and actually enjoyed it. I would have been upset if they didn’t because I put a whole lot of effort into making dinner. I served these Easy Chicken Souvlaki with some Tzatziki and Pita bread. I did make everything from scratch. The recipe for the pita bread will follow.
Ingredients Required
Please note that Greek food is not spicy. It is packed with flavour but far from the Indian food we’re used to. All you need to make these is some chicken breasts, lemon, origanum, thyme, paprika, garlic, salt, pepper and olive oil. I am sure that most of us have all of the ingredients in our pantry. No fancy ingredients required. Souvlaki is a popular Greek food that consists of grilled pieces of meat or fish on a skewer. So feel free to use any other meat or fish.
How to make the Chicken Souvlaki
Firstly, if you use wooden skewers you have to soak them in water for a few minutes. This prevents them from burning. Although these skewers are best made on a grill you can also make them on the stovetop. A griddle pan will do but I threw mine out so I used an ordinary thick based pan and it worked perfectly fine. The chicken is marinated and threaded into skewers. I added red pepper and onion. You can leave it out if you wish. You can also add some baby marrow/zucchini if you wish.
Serving the Chicken Souvlaki I served it with Tzatziki and Pita bread. I also had some Mediterranean cucumber and red onion on the side. It was absolutely delicious and I could eat this everyday. You can have some fries on the side or roast potatoes too. Although it is a little process to get to the final result, it can be made easy if you use store bought pita. Tzatziki can be found in stores too. But nothing beats homemade so all the effort is so worth it. I loved making all the different elements, it was so therapeutic.
