Easy Flapjack Recipe
It is a simple, flop proof recipe and if my kids want a treat in a hurry this is my go to recipe. It also brings back very fond memories of my younger days in Durban. I had an amazing colleague I worked with. It was my second job and I was in a very junior position at the time, but she always made me feel like a part of the team. Her name was also Lorraine and she had the kindest heart, I guess all Lorraines are special people…haha! She took me out for lunches and coffee. One our favourite places was the Botanical gardens, where they served the most amazing flapjacks. Some of us know it as crumpets with cream and syrup…that’s where my love affair started.
It was served with a dollop of cream and loads of syrup. Thank goodness my kids didn’t go crazy with the sugar rush.
What is Flapjacks
Flapjacks is the same as pancakes as some parts of the world call it. Here in South Africa we refer to them as flapjacks, pancakes or crumpets. Yes we know it’s not crumpets. But maybe it’s the similarity that confused people. You would swear some people’s life depended on what a certain food is called. I have taken so much “abuse” because I referred to the pancakes as crumpets. That’s what people called it when I was growing up. And I guess some of us from the more mature generation would still remember it as that. I promise just because something is called by a different name, it doesn’t mean it’s being disrespectful. Some things are referred to by different names in different parts of the world.
How to make Easy Flapjack Recipe
This really is an Easy Flapjack Recipe. Somedays when I’m lazy I practically dump everything into one bowl and give it a quick whisk, even then it’s perfect. They are soft, light and fluffy. These can be eaten with a spread of butter or some cream and syrup, either way they are still so yummy! In my previous recipe I used a tablespoon of baking powder and I found it to be ok. However, some people have advised that the baking powder was too much. I can understand that because some baking powder does consist of aluminium and it’s why you get that metal taste. I have re-tested my recipe a few times and I adjusted the baking powder. This recipe still yields the most amazing flapjacks.
Making this Easy Crumpet Recipe
I did use just over 3/4 cup of milk to make the batter, however if you feel the batter is too thick you can add a little more milk. The batter has to be a dropping consistency. If you pour the batter, it will form a ribbon. That way you know the batter is perfect. Please also ensure you cook them on a medium heat, if it cooks too fast the insides will not be cooked. When cooking the flapjacks you flip them over once you see little bubbles forming on the surface. These can be served with a dollop of cream, some golden syrup or maple syrup and fresh berries. Some days I prefer it with just butter. Either way it tastes delicious.
