I think that’s an apt name because it is more Indian flavours and inspired by the popular Kathi Roll made in India. Only for those, you use a Roti and not a Tortilla. For me the tortilla works better because it’s not as rich as my butter rotis. It makes it more palatable, especially if you’re having an early breakfast.

Egg Masala Wrap

If you’re wondering where I’ve been, actually it hasn’t been that long. We have done a few little renovations in our home. Something I thought I will never do again. But small or big, builders can never just get the job done and leave. They have to do things in drips and drabs. Usually I am a patient person. But when we have to clean everyday and then the builder decides to pop in anytime he pleases and creates dust and dirt again, that annoys me. I like some sort of order in my life. I know I am messy in the kitchen, but that’s ok, because I clean up after me.  Well the job was supposed to be like 3 days, it’s taken two weeks and it’s the third week running and there’s still a couple of little things to fix. My home is not always perfectly clean. Because I have a home full of boys and not to forget naughty Max.  But a messy house does make me anxious. So I do try and keep it as neat as I can. When my house is messy I cannot work.  I feel totally disorientated and I am not motivated to work at all. I love DIY and if I knew how to plaster and lay bricks, trust me I would do it myself.  Maybe that’s something I have to work on…Lol! As if I don’t have enough on my plate already. I have a whole bucket list of stuff I want to do before I leave this earth. Imagine if I add “learning to build a house” on my list. I would never get anything else done. I know I am crazy…haha! I wish I could say blogging is the only thing I do. I have old parents and I take care of all their affairs with some help from my brother. I have an aunt that’s really old too and she has no kids of her own. Of late she is not doing great in terms of her mental health and I’ve had to help with her affairs.

My hubby started a new business  also and as much as I don’t want to be in an office environment I do assist him with some of his office work. As partners we support each other so when he is stressed and has an overload of stuff to do I try and help him. Luckily I do understand his business so that makes it a little easier. So in between taking care of everything I try and develop recipes, cook, bake, do my photography and post recipes. I am also in the middle of starting an NPO. Something I’ve always wanted to do. I feel like I have to give more to society, more so in terms of helping women. Finally, it seems to be working out and I pray it is a success. You will hear all about it soon. I am not claiming to be any sort of superwoman or Mother Teresa. It’s just that I take on too much at times and pay the price when I lie in bed for 3 days with a flare-up. But as they say “God only gives you as much as you can handle”. I feel totally blessed for all we have and how far I have come in my own life that I feel it’s time to pay it forward. For me there is no greater joy than giving.  My hubby is joining me on this journey together with my best friend and we are determined to make it a success. Once all the little bits are finalised I will share more. Before I chase you all way let me share my Egg Masala Wrap Recipe. I am not going to give you tons of history or details because it is a simple wrap.

Ingredients Required

This is a wrap for one person so I am giving you just those ingredients. I prefer to make each persons individually because it is easier that wasy. So you will need eggs, onion, tomato, coriander, chillies, cheese, pinch of chilli powder and cumin (optional) It’s basic ingredients that most of us have in our pantry so you can have this any day you want. 

How to make the Egg Masala Wrap

It is made like an omelette. However, before the omelette is fully cooked you place a wrap on top and let it cook further. You flip it over and allow the wrap to toast and brown a little until crisp. You roll it like you would a wrap, cut in half and serve. Although I am giving you a list of ingredients with my measurements you can easily customize this wrap just the way you like it.  There’s no hard and fast rules to making this Egg Masala Wrap. Indian cooking is easy, we complicate it but thinking too much.
