Being a mom of two growing boys, I understand the importance of eating veggies along with meat proteins. The prep and cooking for this recipe is easy and fun… my kids R2 & R3 helped with this one. (I like how I don’t have to worry about them picking up germs from raw meat or eggs. ;) It might seem like a lot of work to bread each slice, but my 11 year old R2 love to help me and he recently recruited my five-year-old too :P . . . so I set up the breading station and sheet pans for them.
Before I know it, the kids were done . . . and I’m popping the eggplant discs in the oven and start whipping up my quick and easy Homemade asian sauce.
