Here’s what you’ll need for this delicious chutney.

Fresh herbs- cilantro and mint  Garlic cloves Cumin seeds Salt - to taste or you can leave it out altogether. Lemon or lime juice - you could also combine Sugar Green chilies - add as many as you like or omit altogether for less heat. Ice Cold Water - used to get the perfect consistency and to retain the chutney’s bright green color. 

How to make cilantro mint Chutney

Here’s what you need to do for this simple recipe. It won’t take long to create the perfect dip for your samosas or samosa chaat.

To start, place all the ingredients in a high speed blender. Next, blend the ingredients until just combined. Don’t over mix it! It can turn bitter! When the ingredients are all blended, you can check the consistency of the chutney. If you like, you can add a small amount of ice cold water, about a 1 tablespoon at a time, reblend, and check the consistency again. You can repeat these steps until it suits your desires.

Mint Chutney is a super easy dressing that only takes a few seconds to make. But if you are not careful, it can turn bitter and you’ll have to start over. Here’s how to make the best tasting and looking green chutney.

Use ice cold tap water to blend it. It will help retain the bright green color of the chutney. Don’t over-mix the chutney. Only mix until it has come together. Mixing too much can cause a bitter, metallic flavor. Freeze or refrigerate the chutney as soon as you make it if you don’t plan to use it all. This helps keep the chutney looking bright green. Don’t skip the lemon or lime juice. This helps keep the chutney a nice bright green color. Skip the green chilies if you want a little less heat. You can use green chili paste if you prefer for a slightly smoother chutney. Don’t skip the cilantro, this helps keep it from turning bitter when mixed. If accidentally, the chutney becomes runny, add half a slice of bread to the blender to thicken it’s consistency.

Why does my chutney turn bitter?

You should only mix the chutney until the ingredients just combine and become somewhat smooth. If you overmix the leaves, the metal blades of the blender can cause the mint leaves to become a bitter or metallic tasting. Mixing for less time and the cilantro can both help with keeping away the bitter flavor.

How to store it 

We recommend storing the chutney in a glass bottle in the fridge. A glass bottle helps to preserve the flavor of the chutney. Just make sure you have an airtight lid for it. For the remaining chutney, you can pour or scoop it into ice cube trays. Once in the trays, you can place them in the freezer. When you are ready to use them, allow them to thaw for about 24 hours in the fridge. We don’t recommend heating up the chutney in the microwave or on the stove top to thaw it. Allow it to come up to temperature in the fridge for best results.

How long will it last?

If you use an airtight container, it should last about a week in your fridge. In the freezer, it should store nicely for about 6 months. If it has been in the fridge for longer than a week, we recommend you throw it out.

How do I prevent the bright green color from turning dark?

Ice cold water, sugar and lemon juice can help to maintain the brightness of the green. If you are not planning on eating the chutney right away, we recommend refrigerating or freezing the chutney as soon as you make it. This will help slow down the oxidative effect that turns your chutney from a beautiful bright green to a darker green.
