Harissa Chicken Traybake
Let me tell you I have tons of chicken recipes that I have to work on. We don’t eat much red meat so it’s either chicken or fish as a protein. Today I was looking for something quick to put together and this recipe was perfect. A friend came over so I wanted to get the cooking out the way before she arrived. I had all the ingredients, although this wasn’t a planned dish. Often I buy stuff and usually end up making something else. The thing about me is that I cook according to my mood. If I wake up in the morning and I don’t feel like cooking or baking then whatever I make will be a disaster. So my mood dictates my cooking. Often I also make things just for the fun of it. Baking for me is fun. But it has to be simple, uncomplicated baking. My neighbour and my helper are the lucky ones as they eat most of the stuff I make. My fussy family hardly eats much.
Ingredients required
For this dish you will need some green pepper and red pepper, onion, a few spices and harissa paste. You can make your own harissa paste. It is pretty easy to make but honestly somedays I don’t have time to make everything from scratch. If you’re wondering what Harissa paste is? It is a “hot” chilli paste that originated in North Africa. It can be used as a dip or marinade. Today I used store bought harissa paste and the dish still tasted amazing.
How to make the dish
You literally throw everything into a tray and bake. How easy is that! Sometimes I just place everything directly onto the tray and marinate it there too. That’s when I’m really in a rush to get things done. Today I did it in a little more orderly fashion. I marinated the chicken in a bowl and I mixed in the veggies. That way I got some of the flavour into the veggies as well. I also cooked my potatoes until slightly tender before adding it to the dish. As you know with the high altitude potatoes don’t cook very well in Johannesburg. If you living on the coast you may not have to pre-cook your potatoes. This dish takes an hour to cook. I like my chicken to be really well cooked.
