Lemon Roast Potatoes
Seeing we cannot eat at our favorite Greek Restaurant these days we have to settle for everything homemade. I guess we can go to restaurants if we choose to. But we are being extra cautious. The days are getting tougher, being couped up at home is not the easiest. Especially not for my sanity. But I am always grateful so I am staying as positive as I can. The scary thing is that I am hearing people so close to home are ill with Covid19 or we know someone that’s died from it. As much as we want to deny just how huge the impact of this virus is. It is here and doesn’t seem to be going anywhere soon. Please please stay home as much as you can. Wear your mask and don’t forget to constantly wash your hands. Take that extra precaution and wipe down your grocery with sanitizer. Every little precaution may just save you and your family from being ill.
We miss our family and friends, my kids miss their friends but it is a small sacrifice. Someday it will be all ok. When that day comes I hope we can all be so much more appreciative of everything around us. Until that day please stay safe and take care of your loved ones. One thing I know for sure is that when all this is over I should become an expert cleaner. Hopefully mastered a few more cooking skills too. I have already come a long way in terms of my Lemon Roast Potatoes.
Cooking the Potatoes
These potatoes are cooked a little on the stovetop first. I boiled mine for about 2o minutes and then popped them into the oven for another 45 minutes. It does take a bit of time to cook but there’s not much prep. Whilst your potatoes are cooking you can get busy with other stuff without worrying about it too much. We love the lemony flavor in these potatoes. However, I always pop my lemon in the microwave for 20 seconds before using them. That way I get more juice, it’s why I only need half a lemon for my potatoes. If you want more lemon please feel free to add more.
Garlic?
You can also use garlic powder or fresh garlic. The only thing is that the fresh garlic may only be added towards the end of cooking time. If you really don’t want to fuss over that then I suggest the garlic powder. You can also choose to roast your potatoes with the skin on or remove the skin. It’s a matter of personal preference.
Which Potatoes are best
For roasting, the best potatoes are the floury/waxy potatoes. These have a high starch content and it’s what you need for potatoes to maintain their shape when roasting. Although we don’t get a huge variety of potatoes here, you do find potatoes in the supermarkets that will confirm on the package if they’re good for boiling, roasting etc. The Sifra potatoes are perfect for these Lemon Roast Potatoes, which I used for this recipe.
