Marble Loaf Cake

It takes me forever to write and can you imagine starting over. Just when I thought the universe was in my favour…Lol! Let’s hope I remember all the blabbering I did in my earlier post. If you don’t like listening to my stories just scroll to the bottom, it’s where you will find the recipe. For those that write to me and I haven’t been responding on time please bare with me. I have a whole lot of projects that I am busy with so I am juggling a lot right now. I promise I will try my best to answer all my mail and work on recipes you request. I just don’t feel it’s fair to give you a recipe if I am not 100% confident it works. All my recipes may not be perfect but I try my best. But also giving you a recipe at the top of my head doesn’t feel right to me. I have been blogging for two years and I faced a lot of rejection.  Suddenly I have so much work I am feeling a little overwhelmed. It feels like I am totally out of my comfort zone. But I am grateful for every opportunity and embracing every new project. Last week I got to work with a big brand. I worked on set with a whole production team, it felt a little surreal. I even had a make-up artist waiting on me and keeping every strand of hair in place…Lol! Now I know why everyone on TV looks perfect all the time…haha! The experience was amazing although I was nervous as hell. Who would have thought I will work in front of cameras! This lady that only a few years ago still believed she wasn’t worthy or good enough. I never would have dared show my face because I was too afraid of being judged. Today I don’t really care about what anybody thinks of me. And let me tell you that’s freedom on a whole new level. I feel so free for the first time in years. If you are reading this and you ever feel less than your worth, know that you are enough. You don’t need the approval of others to feel worthy.  Remember nobody can make you feel less than you are without your consent. So what are you waiting for, go ahead and live your authentic life, just the way it should be.

Ingredients Required

This cake only needs a few pantry staples. Don’t we love that. You will need butter, castor sugar, eggs, vanilla essence, cake wheat flour, baking powder, milk, cocoa and water

Butter vs Margarine

I know I mention butter in all my recipes. I do love butter I do admit that. However, if you want to use margarine in your baking please go ahead. No judging here. Growing up my mum used a lot of margarine. Butter was a luxury. I get that butter is also really expensive and not everyone can afford to use butter all the time. Cakes turn out just as great with margarine.

Yes I know all about margarine not being as healthy or good for our bodies. But do what suits you, life is too short to have it any other way. Trust me even the major bakeries and hotels use margarine. We don’t always know that they do. We stayed at a boutique hotel once. They made the most amazing cookies and I asked for the recipe. When I got the recipe I was surprised that margarine was used in the cookies. But it was oh so delicious.  For most of my recipes I prefer to use the genoise method, where I beat the eggs and sugar first. This gives me a light and airy cake. Today I beat the butter and sugar first and I added the eggs and beat some more. The longer you beat the butter and sugar, the lighter and more aerated the mixture becomes. This is what give cakes their light texture. I know it can be a task beating for long but trust me it will be worth it.
