Marry Me Chicken
Marry Me Chicken, sounds like an odd name right! Apparently if you make this chicken chances are that you may get that ring on your finger. It’s really that good. I have seen many recipes for this chicken dish which is very similar to a tuscan chicken. All the recipes are very similar with a few minor variations. So feel free to adjust the recipe according to your taste. I love the tanginess of the sundried tomatoes and the creaminess of the sauce. It the perfect combination of flavours and I seriously can’t get enough of it. Creamy dishes always taste so delicious, like my other Chicken dish Creamy leek and mushroom chicken which is also another one of my favourites.
How to make the Marry Me Chicken
This dish only takes half an hour to prepare so you can have dinner in a jiffy. You also need just a few ingredients. You will need chicken breasts, sundried tomatoes, paprika, chilli flakes, garlic, butter, olive oil, dried oregano, cream, parmesan, chicken broth/stock and salt and pepper. The sundried tomatoes are blended together with the cream. You brown your chicken and use the same pan to cook the sauce. Chicken is then added back to the sauce and dinner is served. This chicken can be served with some mashed potatoes, pasta or just a fresh green salad. When cooking the chicken please do not cook for too long. It only takes about a minute on each side, especially if you have cut your chicken in halves. Besides, if the chicken is not fully cooked it will cook further in the sauce. Chicken breasts can become chewy very quickly, if not cooked right. The one thing to remember with chicken breasts is that you either flash fry them or you steam them in some water for a much longer time, if you want tender chicken breasts. There is no in between cooking time for chicken breasts. I will try and do a post on how to cook them soon. I know a lot of people struggle with cooking chicken breasts and I do get questions about it from time to time. If you are not comfortable cooking chicken breasts feel free to use thighs. For me personally the boneless chicken thighs don’t work because my kids don’t like the fattiness. I don’t mind thighs on the bone but I am also not a fan of boneless ones.
