What are Mung bean sprouts 

Mung bean sprouts came from Asia. There are tons of recipes that use the sprouts in both China and India. In China, people tend to use them in stir fries, while in India they tend to steam or cook them directly into a recipe.

Are Mung Bean Sprouts Healthy? 

Mung bean sprouts are very healthy for you! They are packed full of important vitamins and minerals. They also contain antioxidants and amino acids. Also, the mung bean sprouts are full of protein and fiber. This makes them very filling, which means you can eat less of them and still feel full. And they are low in calories, which makes them good for weight control.

Benefits of sprouting at home

Mung bean sprouts are super easy to sprout at home. Sprouting them at home is a more affordable option than purchasing sprouted beans.  And, if you are looking for freshness, sprouting your own beans is a great way to go.

For the stir fry, you’ll need:

Oil - Any light tasting oil will work well. Sprouted Mung Beans - Follow the steps below to sprout your own beans at home. Vegetables - You’ll need both cucumber, pink onions, and cherry tomatoes. Fruits - You’ll need pomegranate arils and pineapple tidbits. Spices - The spices and herbs you need include green chilli, cumin seeds, chaat masala, salt, and cilantro. Lemon juice - You can use either fresh or bottled juice.

How to Sprout Mung beans at home using an Instant Pot

The Instant Pot makes a lot of recipes, even sprouting beans, easy!

Start by rinsing and soaking the whole mung beans overnight for about 8 to 10 hours or until they swell and double in size. After they have soaked, drain the water using a colander. Next, transfer the soaked beans into a steamer basket for your Instant Pot. Once they are in the basket, place a trivet in the inner pot and place the steamer basket with the soaked mung beans on top. Once they are placed on the trivet, close the lid and use the yogurt function for 12 hours in summer and 24 hours in winter, so the beans can sprout. It typically takes about 2 days for them to sprout completely. Once sprouted, you can store them in an airtight container for up to 2 weeks or make a sprouted mung stir fry.

How to sprout mung beans without an Instant Pot

If you don’t have an Instant Pot, you can sprout them naturally using the following steps.  First, thoroughly rinse the beans and then soak the whole mung beans overnight for about 8 to 10 hours or until they swell and double in size. After they have soaked, drain the water using a colander. Next, wash them in clean water and drain in a colander. Finally, transfer all the drained beans to a container, cover them, and set aside. They will sprout on their own in a few days. If they don’t sprout, rinse them and drain them again. 

How to use Mung Bean Sprouts

Mung bean sprouts go great in stir fries, salads, and several Indian foods. We love using them in our green mung dal. They are also delicious when mixed into Asian inspired salads, stir fries, or with lo mein noodles. 

How to make mung bean sprouts stir fry

If you want to use your sprouts right away, you can try them in this stir fry. Here’s what you need  to do.

First, heat a tablespoon of oil in the Instant Pot using the Saute function. Next, add the green chilli and cumin seeds and wait for the seeds to crackle. Once it is fragrant, add the sprouted mung beans and stir for a couple minutes until the sprouts become tender. Next, transfer the mung sprouts into a large bowl. Finally, mix in pink onions, cucumber, cherry tomatoes,  pomegranate arils, pineapple tidbits, lemon juice, cilantro, and salt to taste. You can serve the stir fry warm or cold.

Pro tips for sprouting

If you want to try to sprouting your own mung beans, make sure you follow these tips:

Before using them, make sure you rinse them thoroughly to remove all dirt and debris.  Use the Instant Pot for a consistent temperature and to help speed up the sprouting process. Make sure the beans have doubled in size and have started to shed their outer shell before trying to sprout them.

Meal prepping

If you plan to use fresh mung bean sprouts, you should plan ahead a bit. They will take 1 to 2 days to sprout and can last for up to two weeks in the fridge. We recommend making them a few days ahead to make sure they sprout without issue.

Storing

You can store the beans for up to 2 weeks in an airtight container. You can also place them in a plastic bag with a moistened paper towel in the fridge for a few days before using in your favorite recipe.

Serving suggestions

You can use mung beans in stir fries, salads, and as a topping to lots of different Indian or Asian recipes. They add a good amount of protein and fiber to any dish you use them in. They also go great in green mung dal or our pineapple mung salad or even in the stir fry recipe below.
