One Pot Lamb and Rice

Don’t know about you but I’m always never up for slaving at the stove. My family thinks it’s my job to cook, don’t know where they get that idea. But if it’s what I am going to do for the rest of my life you bet I am going to make it easy…Lol! This morning I had an idea but I quickly tossed that out. I was going to make a Mince Pilaf but then I realised my kids are not fans of Pilaf or Biryani. Seeing I don’t eat red meat that would have been a waste. Therefore I tried to make this like something in between, just so they will eat it. I also added veggies to it so they get to eat a balanced meal. See, I’m trying to be a good mother…haha! As much as we all want our dishes to taste great and be that perfect dish. Not everything is going to work for everyone. Because our palates are all different. What may taste great to me may not taste all that great to you. When it comes to these sort of dishes I think you can very easily adjust the spices or add other spices to it. There is no hard and fast rule to cooking. I see my recipes as a guide to help you create a dish. You can then “fine tune” it just the way you like it. Often we see a recipe and it can be so daunting. Remember with baking there is a science behind most recipes but when it comes to cooking it’s different.  You taste and adjust ingredients as you go along. That’s how we learn and perfect our dishes according to our own taste.

Cooking the One Pot Lamb and Rice

What I love about one-pot dishes that contain rice is that you don’t need to pre-cook your rice. It’s all cooked together with your protein at once.  This way you don’t have to wash too many dishes and once everything is in the pot you can literally set your timer and walk away. How convenient is that? For this One Pot Lamb and Rice I added some red pepper, sweetcorn and spinach. You can use other veggies if you wish.  I also used veggie stock for this dish but you are welcome to use any other stock. You also don’t have to use lamb mince, any mince will work. Cooking time for these sort of dishes is also only about 30 minutes. Almost all of my one-pot dishes is not more than 30 minutes cooking time.
