Oyster Mushroom Curry

In India I think some people get really offended when you utter the word curry. They have a name for every dish unlike here in SA. But we understand each other, right! My mum always cooked these Oyster mushrooms this way. However, I haven’t cooked them in a while. Today I had to message my sister in Australia and get a little help. All I can say is this Oyster Mushroom Curry is heavenly. No other mushroom, cooked this way, tastes as good. You’ve got to trust me on this. My hubby ate this for the first time today and even he was blown away. He didn’t plan on eating lunch at home. But then changed his mind so he had a little taste. Unfortunately he didn’t have time to even talk much as he was rushing back to a meeting. When he got to the office he sent me a message to say how delicious the food was. That should tell you something. I guess it’s also why he’s sticking with me…for the food…haha!

Ingredients Required for this dish

You will need oyster mushrooms, olive oil or vegetable oil, onion, chilli, curry leaf, garlic, turmeric, chilli powder and salt. It’s a really simple dish with not much spices. You actually don’t need a whole lot of spice for something to taste good. All you need is a sprinkle of love. 

How to cook this dish

Firstly, never wash mushrooms. They absorb a lot of water and by washing them the water soaks right in. Use some paper towels or a clean damp kitchen towel and wipe them on both sides. They are then sliced, thinner the better. These mushrooms have a very meaty texture so I prefer slicing them a little thin. It is also best to use the younger oyster mushroom as the big ones can be quite leathery. As I said it is a simple dish and simple to cook too. Heat up some oil, add the onion, curry leaf and chilli. Allow the onion to cook until translucent. The garlic is then added and cook that for a couple of minutes to release the flavour. Add the turmeric and chilli powder. We do not add too much chilli powder as we just need a little for flavour. Too much will be overpowering for this dish. Add the mushroom and cook for about 15 minutes. Your dish is ready in about 20 minutes.
