Paneer Scramble
A few months ago I made this recipe and it was purely by accident. I messed up my homemade Paneer but I didn’t want to throw it out. I thought what if I turn this into something like scrambled eggs. And I remembered my mum making scrambled eggs with chillies and onion. When I made that dish I of course added a few more ingredients and thought what a delicious meal. Today I made it again and I thought let me google to see if there were similar dishes. To my surprise this dish is called Paneer Bhurji and bhurji means scrambled. How interesting. It is a Punjabi dish and made very similar to mine, apart from the spices. I prefer mine with less spice so I only added turmeric. The punjabi dish also has tomatoes in it and it looks a lot more scrambled than mine. The tomatoes also make it a little more moist. You can google and there are loads of recipes online. Maybe you can make it the way the Punjabis make it, if you prefer more going on. This dish for me is heavenly. I can’t get enough of it because it’s that delicious. I am not even that crazy about paneer so if I tell you this is good believe me it’s good. If I could eat paneer just made this easy I will be happy.It take a few minutes to cook, literally. Although it sounds like a breakfast dish I personally think you could eat it anytime of the day. Well at least I could. This dish can be made in the larger quantity if you’re feeding a family or halve it if you wish. It works great either way. Today I used store bought paneer because I didn’t have time to make my own. However, I prefer homemade as I think it’s a lot softer and works better for this dish The last time I made it I did use homemade paneer. However, I know the majority that tries this dish is probably going to use store bought. It is best to eat this dish when freshly cooked. As the paneer can get a little hard. However, you can add a little water if re-heating and that will soften it a little.
Ingredients required for this dish
For this dish you will need paneer, vegetable oil, onion, cumin seeds, chillies, green pepper, turmeric, garlic, coriander
How to prepare this dish
You will break your paneer into little pieces, like scrambled eggs. Set that aside. Heat the oil in a pan and add your cumin seeds. Once it splutters add onion and green pepper. When the onion is translucent add the green chillies and turmeric. Then add the paneer and cook for about a minute. Garnish with coriander and add a drizzle of lemon juice if you wish and serve. It’s best eaten with some fresh bread or toasted if you wish. And a dash of sweet chilli sauce. Please do make this and let me know what you think.
