What are Patatas bravas?

Patatas bravas are a spicy, Spanish potato. Traditionally, they are fried and then topped with a sauce or salsa to give them some extra flavor and spice. Our patatas bravas puts a healthier spin on these popular Spanish potatoes. We use the air fryer to give the potatoes a nice crisp texture without all the extra oil associated with pan or deep frying the potatoes. We also add a tasty garlic aioli. This adds flavor while helping to cool down the spiciness.

Ingredients to make the best Patatas bravas

When you are ready to make these spicy Spanish potatoes, you’ll want to have the following ingredients on hand.

Yukon gold potatoes - You could use white potatoes if you can’t get Yukon. Olive oil Salt to taste Parsley - This is an optional garnish on top.

To help cool things off, we also make a garlic aioli to top the potatoes. For this tasty addition, you’ll need:

Mayonnaise ( veganize it by using vegan mayo) Garlic cloves - garlic brighten the flavor palette Lemon juice - Just a squeeze !

Ingredients to make Salsa Bravas

Spanish potatoes are not completely without a salsa or sauce to go on top. Here is what you’ll need for the salsa.

Olive oil  Crush tomatoes  - the heart of this dish Garlic cloves - added flavoring Yellow onion - If you prefer, you could use a red onion instead. Smoked paprika - give a nice kick Hot sauce - We use Tabasco, but you could use any sauce you like. Salt - A must!

How to make Patatas Bravas in an Airfryer / Airfryer lid

The air fryer makes it super easy (and much healthier) to make traditionally fried foods. And patatas bravas are no exception! Here’s what you need to do.

Peel the potatoes, wash them with cold water, and then pat them dry. Next, cut them into roughly ¾ inch pieces. Try to keep them about the same size for even cooking.

Once the potatoes are ready, place the potatoes and water into a shallow pan. Bring the water to a boil and then parboil them for 2 minutes. Finally, let them rest on a baking sheet and cool for a minute. Then, drizzle olive oil and sprinkle salt on the potato cubes and then gently toss to coat them. Preheat your air fryer for 3 minutes at 400 degrees and then add the potatoes into the basket. Make sure to leave a little space between each piece to ensure even cooking. You may need to divide the potatoes and cook them in batches to give them enough space. Insert the basket back in the air fryer and cook for 10 minutes. After 10 minutes, give the potatoes a toss and cook for an additional 5 to 8 minutes or until they are tender and crisp on the outside. They should have a nice golden brown color. Serve them hot with the salsa bravas and garlic aioli. See below for instructions on how to make them.

How to make salsa bravas / patatas bravas sauce

Spicy Spanish potatoes need a bit of salsa or sauce over top. Here’s what you need to do to make the sauce. First, heat the olive oil in a sauté pan over medium heat. Once warm, saute the onion and garlic until soft and golden. This will take about 5 minutes. Next stir in the tomatoes, salt, paprika, and hot sauce and the mixture to a simmer. Finally, reduce heat and allow to simmer on low for about 15 minutes, stirring occasionally. You can now taste and then adjust seasonings if needed.  For a smooth sauce, use an immersion blender or food processor to puree until smooth. Otherwise, set the salsa aside until you are ready to top the potatoes with it.

 

For the garlic aioli, all you need to do is mix the mayonnaise, lemon juice, and garlic in a small bowl. You can add salt and pepper to taste if you like. Set the aioli aside until the potatoes are ready.

How to make Spanish potatoes in an Oven

First, peel the potatoes, wash them with cold water, and pat them dry. Next, use a sharp knife to cut them into roughly ¾ inch pieces. For even cooking, try to keep the pieces about the same size. Once the potatoes are ready, add the potatoes and water to a swallow pan and then bring it to a boil. You’ll need to parboil them for about 2 minutes and then let them rest on a baking sheet. Next, drizzle olive oil and sprinkle salt on the potato cubes and then gently toss to coat them. Preheat the oven to 450 degrees.  Place them on a tray and bake them for 20 minutes, flipping halfway through, or until they are golden brown. Serve them hot with the salsa bravas and garlic aioli. 

Pro tips and tricks

When you make these spicy potatoes, follow these tips for best results.

Don’t skip parboiling the potatoes! This helps to make them tender and moist on the inside while staying crisp on the outside. Keep the potatoes an even size (as best as possible). This helps ensure even cooking. If you make them much bigger or smaller, you’ll need to adjust the cooking time by adding or subtracting time from the total. For a mild flavor, you can omit the hot sauce or use a milder version. Of course, they taste best with a little heat!

How to serve patatas bravas

For basic serving, we transfer the potatoes to a platter and then top with the salsa and aioli. To top it all off, we sprinkle fresh parsley over top. Can I make patatas bravas spicier?

Want to spice things up? Sometimes you just need more heat. Here are a couple of suggestions:

Use our sriracha aioli recipe for some added heat. We also have a spicy salsa you can try instead of the salsa bravas. For extra heat, you can also add more hot sauce into the salsa itself. Add red pepper flakes to the potatoes before placing them in the air fryer.
