Pecan Shortbread Cookies
Not sure why I haven’t created a recipe book full of cookies yet. Someday soon I hope. It’s got to have not more than four ingredients though…Lol! I only do cookies that are simple and tastes good. I never thought the day would come when I will actually use oil in my cookies. But a friend convinced me and I had to try. Ok I was wrong, oil does work well with some cookies. Like this one. The cookies are delicious and the oil, besides preserving the cookies, also adds a lovely crisp texture to the cookies. I also love the fact that these cookies are not perfect looking, much like me. They are a little rustic and has so much “character”, just the way I love people too…Lol!
Ingredients Required
All you need for these Pecan Shortbread Cookies is butter, vegetable oil, castor sugar, flour and pecan nuts. How easy is that! I have tried making these cookies with brown sugar and castor sugar. My preference is definitely castor sugar. The castor sugar makes the cookies crisp whilst the brown sugar makes it more crumbly textured. It’s all about preference.
The Cookie Dough
When adding the flour please do not add it all at once. Flour should always be added little bits at a time because sometimes you may need less or more. In Winter flour is dry and in Summer flour has more moisture, it absorbs moisture from the humid air. Weather can therefore also affect the quantity of flour required. When mixing the cookie dough it may seem a little crumbly at first but as you mix it will come together. You will require a firm,but not stiff dough. The dough should be almost like play dough. So when adding flour please bare this in mind. Butter There’s nothing more delicious than using real butter in cookies. Although I understand butter can be expensive I would rather make small quantities and enjoy them rather than not use butter.
