Salted Brown Cookies

  My kids are certainly not complaining, anything with chocolate certainly goes down without a complaint. It’s funny I have never been a major fan of chocolate anything.  I am more the vanilla kind of girl. I may be the only one in this world not totally crazy about chocolate. If I feel like some sugar then I will eat a chocolate, my favorite is the white chocolate lunch bar, then it’s Lindt. And if I can’t have chocolate then it’s Peanut Brittle. Give me peanut brittle and I am happy as a lark. If I had my way I would eat peanut brittle everyday.  These Salted Brownie Cookies are totally delicious, trust me. But if I had to choose between these and Vanilla Choc-Chip Cookies it would be the vanilla. I have been meaning to perfect this recipe for a while and I finally got around to doing it. It has been tested a few times and I am happy with the results. The only thing I didn’t get quite right was that shiny tops. From doing some research the melted butter should be quite warm when mixed into the sugar, that’s what creates shiny tops. Well, all I can say I tried that a few times and although my cookie dough looked really shiny, the shiny tops didn’t happen when baked. Shiny tops or not it still tastes amazing. So let’s not stress too much about the shiny tops. It is a fairly easy cookie recipe and I am sure the kids will have fun making them too. My 12-year-old helped me make them, to an extent. He is not a fan of the kitchen but every once in a while he will help with something if he’s in the mood. As for my son, the qualified Chef,  has now decided maybe the Corporate World is more for him. So he has an office job for now. My parents were very open-minded, they allowed us to make our own decisions. Even if our decisions were wrong. Now that I think back I realise as strict as we thought they were, they were also the most supportive parents. Regardless of the mistakes we made they never ever pushed us away. I want to be that parent for my kids. I want them to know I will always be here for them no matter what. They are allowed to make mistakes but what I won’t tolerate is the same mistake being made twice. Although my son studied to become a chef but I will never force him to pursue it until he is ready. Whatever my kids choose to do I am ok with that, as long as they can live comfortably and grow up to be decent, respectful human beings. And always uphold the values I’ve taught them. I think it’s what my parents had in mind when they raised us and I know they are super proud of the four kids they’ve raised. We may not be perfect but we certainly have been raised with good values. Back to cookies!

What Ingredients do I require

You need pretty basic ingredients for these cookies, cake wheat or all purpose flour, salt, brown and white sugar, egg, bicarbonate of soda, cocoa, vanilla essence and chocolate chips.  It is “salted” so I sprinkled some salt flakes on top. However, feel free to leave out the salt if you’re not a fan. I also used salted butter for my cookies so I didn’t add salt to the cookie dough. However, if you are using unsalted butter you can add a little salt to the cookie dough.

Quick and Easy

There is no fancy tricks to making these cookies . You basically beat the egg and sugar and then add the vanilla, butter and cocoa. The dry ingredients gets mixed in. The cookie dough is then made into balls and baked. No refrigeration time or any complicated techniques required. You literally can have a batch of cookies in less than 3o minutes.
