The boys are trying to help but some things I would rather do by myself. Do men know that plastics and blenders don’t exactly get washed in the dishwasher? Do they know that laundry gets separated and socks doesn’t get washed in a ball, it needs to be opened up. I’m literally sneaking in a few minutes just to type this post because very soon I will hear “Mom I am hungry, what’s for supper”.  I love my family but I also love a little bit of space, you know those few minutes where you can actually breath. Ok, rant over, I feel better! Apart from my moans I am so grateful for everything I am blessed with. These past few days have taught us what togetherness is all about. It has taught us to be tolerant and mindful of each other. My children and us adults have learnt not to take everything for granted. We have been also eating simply so when this is all over we can appreciate everything we have and be more conscious of our habits, behavior and the world around us. And suddenly the need to be loved by all the people, I have literally, forced myself onto all these years don’t matter anymore. It’s like the world has come to a standstill.  So we can allow ourselves the time we so need to reflect and love ourselves and enjoy our own company again. I have never really stopped and appreciated the fact that the people right next to me loves me the most and that’s all I really needed. Back to my Simple Tuna Melt. This is how I have been making tuna for years and it’s simple and delicious. I personally don’t think it needs anything more. I am really a plain Jane when it comes to food as you should all gather by now. Luckily for me I purchased some Ciabatta Bread before the lock down and I had some in the freezer, so that was a treat today. I haven’t been baking bread as I cannot get yeast in the shops and thankfully we don’t eat a lot of bread.

This tuna filling has just a few ingredients, chilli, onion, tomato and mayonnaise. Pop it onto any bread you prefer. Grate some Cheese on top and you have the most delicious sandwich you have ever eaten.
