My hubby is a huge Omelette fan, usually it’s tomato, onion, mushroom and loads of pineapple. Yes, pineapple! Who eats pineapple in an omelette…only my crazy hubby! Spicy Masala Omelette

He could literally eat pineapple with everything. I’m just glad I don’t have to share his food, no thanks. This Spicy Masala Omelette definitely has only the nice stuff in it, definitely not pineapple.

What goes into a Spicy Masala Omelette

It’s a few pantry staples, nothing you have to rush out to the shops to buy. All you need is eggs, tomato, onion, chilli, coriander, chilli powder, cumin and some cheese which is totally optional. And of course, a little bit of butter to fry the omelette. Doesn’t butter just make everything better!

How do I make it?

You chop up all the ingredients that needs chopping. The egg is then beaten with a fork and mixed with the other ingredients. You heat some butter and fry half of the mixture until it is a little crisp on the edges and perfectly cooked in the center. When you flip it over you can add some cheese if you wish or you can totally omit the cheese

Breakfast in a jiffy

This is so quick and easy to make. I must admit I am not a huge breakfast fan, the most I have for breakfast is muesli and yogurt, a smoothie or provita and cheese. On the odd day I may have an egg but that’s not often.  However, I did enjoy this omelette today. It was a good change from my boring breakfasts.
