Spicy Rice

Disclaimer: If you don’t like stories keep scrolling, the recipe is at the end of the page…haha! My 13-year-old is obsessed with spicy rice. Yesterday I made some fish and I knew if he came home he would ask if I made rice. Being a mother and a wife is a full time job on its own. I have to squeeze in time for everything else. Even though I wasn’t up to cooking rice, as I had cooked some veggies too, I had to keep my kids happy. It’s what mothers do, right? I feel like I am that mother that doesn’t quite fit the description of doting mum or supermum.  I am a mother that’s always questioning my parenting skills. It’s funny how we see so many perfect families on social media. Perfect couples with perfect kids. If you’re someone with so many insecurities I guess that doesn’t help. Yes I am that insecure mum. We have a blended family which can sometimes get complicated. But what is life without challenges. I think I do my best as a mother. But as I said the picture perfect social media gets us questioning ourselves from time to time. As mothers we do our best based on our circumstances. We raise our kids as best we can until they can fend for themselves. Once they are adults what they choose to do or the path they choose to follow is up to them.I’m mentioning this because I see mums beat themselves for not being perfect mums. So often when things go wrong with kids I hear people say “they weren’t raised right”. Let me tell you there are many many parents that have done their best for their kids. All parents have hopes and dreams for their kids. I don’t think any normal or sane parent would raise their kids to do wrong or follow the wrong path.  If you’re a mum or dad struggling and questioning your parenting skills I just want you to know you’re not alone. You’re doing your best so keep going, no matter what social media makes you believe.

Ingredients to make the rice

Basmati rice or any long grain rice you prefer. I used butter, few drops of oil, red pepper, carrots, peas, onion, garlic, oregano, chilli powder, paprika, turmeric, tomato paste and chicken stock I tried to keep this recipe simple with basic pantry ingredients. The brand of basmati rice I use is the Maharani brand. It’s the only one I use but feel free to use any rice you prefer.

How to cook the rice

Usually it is 1 part rice and 2 parts water. That’s how I’ve always cooked my rice and it turns out perfectly every time. There are some rice that you may require less liquid.  For this recipe I heat the butter with a few drops oil, to prevent burning. The onion, carrots, pepper and garlic is added to the pot and sautéed until translucent. You then add the oregano, chilli powder, turmeric and tomato paste. The rice is added with the chicken stock, brought to a boil and then simmered until cooked. A few minutes before the end of cooking time you can add the peas During the cooking process do not mix the rice. I only fluff the rice with a fork once it’s completely cooked.

I hope you give this rice a try, I promise it’s so good. When I first made this rice, my child opened the pot and he exclaimed “wow that looks so good and smells good too”. Don’t think I saw anyone get that excited about rice. At least it confirms he has some South Indian blood in him…lol!
