White Chocolate and Strawberry Coconut Ice

I’ve had a few requests for Coconut Ice so I took inspiration from a few recipes on google and decided to make a White Chocolate and Strawberry Coconut Ice. Heavenly, is one word to describe it. If you don’t have Nesquik for the flavouring don’t despair you can leave it out or if you’re ok with a strawberry flavoring you can use that. Please note that this is a recipe that’s pretty sweet so all I can say is eat at your own risk. As you will all know I’m not crazy about overly sweet stuff but this is one recipe that needs that extra sugar. The reason why icing sugar is added is to make it a little “hard”. I added a little less sugar than most people use. I added chocolate so that counts as more sugar. This is a very quick and easy recipe. If you want a coconut ice that’s a little “boujee” then that’s in the decorating. Can you tell I’m rubbing shoulders with too many young influencers…haha! I love pretty things but I don’t have time to slave over them. So I find ways to make things pretty will little effort. If you’re the type that can sit with your head buried in decorating for a whole day then by all means go for it. I’m a little ADHD so whilst I’m decorating I will be thinking of the hundred other things I have waiting. And therefore my decorating will turn out a disaster due to my impatience. Today my right brain was actually working. So I came up with a way to make my coconut ice all pretty. Sometimes I surprise myself…Lol!

Ingredients Required

For this recipe you require condensed milk, icing sugar (no other sugar will do), white chocolate, nesquik and dessicated coconut. Everything is mixed by hand. You press into a square container and refrigerate for 15 minutes. You can then cut it as desired. You can also use the Malaysian cutters but to be honest I’m not a fan. I use them sometimes but I like different, not what everyone else is making. So if you want to impress your guests then I suggest you be different too. Just kidding, you do whatever makes you happy. Life’s too short to have it any other way. We’re all different and it’s ok to accept that and embrace our uniqueness.
