Recipe for Crispy Zucchini Fritters 

Our crispy air fryer zucchini fritters are some of the best we have ever tasted. We have made them for a long time and have had plenty of time to perfect our recipe. Our families make special requests to have them for dinner or lunch for school or work. They are that good, even though they contain mostly veggies! That’s right, your kids or picky eaters really won’t care that you  are serving them veggies because they are deliciously seasoned and have a great crunch to them. Also, they are a great excuse to enjoy your favorite dipping sauce. And since they contain so little oil, you really won’t need to feel bad that you’re eating so many of them at one time!

Crispy Zucchini Fritters Recipe Ingredients 

When you make these delicious, crispy zucchini fritters, you’ll need:

Zucchini - Look for fresh zucchini that does not have a lot of dents or bruises on it. You can use yellow or green if you prefer. Gram or besan flour - You could substitute with another gluten free or regular all purpose flour, but we find the besan flour gives the best crunch.  Seasonings - We use garlic powder, crushed black pepper, and salt. Parsley - You could also use spring onions or cilantro. Cooking spray - This helps give the fritters a crispy outside as they cook.

How many Zucchini in a Cup?

Zucchini can vary greatly in size and shape. A rough estimate is that a 2 to 3 medium zucchinis will make about a 1 cup after salting and squeezing them. If you are  looking for a weight estimate, about ½ a pound will make about 1 cup once you salt and squeeze out the extra moisture. See the instructions below on how to do this.

How To Make Crispy Zucchini Fritters (Stove Method)

First, wash, dry, and grate or shred the zucchini using the larger holes of a grater. Next, place the zucchini in a bowl and sprinkle a little salt on them. Allow them to rest for about 15 minutes. During this time, the salt will help suck out extra moisture, which helps make them crispier when you cook them. As you wait, set your oven to 350 degrees F. After 15 minutes have passed, take small portions of the grated zucchini and use your hands to squeeze out as much water as you can.  In a medium mixing bowl, combine  the zucchini, gram flour, garlic powder, crushed black pepper, and salt into sticky batter. When the mixture is ready, line a cookie sheet or flat baking dish with parchment paper and then spray with cooking spray. Next, form 10 patties out of the mixture using your hands. You may find scooping them with a measuring spoon helps keep them a uniform size. Place them on the prepared sheet with a little space between and then spray the tops with cooking spray. Once you arrange the patties on the pan, bake them in the oven at 375 F for 20 minutes or until golden brown on the outside.. Carefully remove them and then serve them with your favorite dipping sauce.

Next, carefully place the patties in the air fryer basket in a single layer and spray with cooking oil.  Air fry the patties at 350 F or 175 C for 6 to 8 minutes, flipping once halfway through Finally, allow them to cool and then serve them with a garlic herb dipping sauce.

Make sure to spray them with either oil or cooking spray. This will help them crisp up as they cook. Try to make them a uniform size so that they cook consistently. Do not skip adding salt to them! This helps draw out the moisture so you don’t have a soggy mess.

Why are my Zucchini Fritters soggy?

Zucchini is a  very moist vegetable. As they cook, they release a lot of water. One of the best ways to prevent this is to sprinkle them with salt before making the batter. The salt helps to suck out the water, which allows you then to wring out the excess moisture that causes them to get soggy.

Storing and Reheating Zucchini Fritters

Like a lot of fried food, these are best served hot and fresh, but that does not mean you can’t store them for later. To store, allow them to cool completely and then place them in an airtight container. You can then store them in the fridge for about 5 to 7 days. If you prefer, you can follow similar steps to freeze them. However, we recommend wrapping them in a paper towel and plastic wrap before freezing to help prevent excess moisture from building up on them. They should stay fresh for up to 6 months. When you freeze them, allow them to thaw overnight in the fridge. In either case, you can use your microwave to reheat them or toss them in a warm oven. Allow them to heat up for a few minutes before serving them.

How long can you keep Zucchini Fritters in the fridge?

If you place crispy zucchini fritters in an airtight container and don’t take them in and out, the zucchini fritters should last about a week or 5 to 7 days. Just make sure to store them in an airtight container.

Can I Freeze Zucchini Fritters?

Yes, you can freeze them. To freeze, we recommend wrapping them in paper towels and then plastic wrap and then placing them in a freezer safe container. You can then let them thaw overnight in the fridge before reheating them. Zucchini fritters should stay fresh for about 6 months in the freezer.

What to Serve with Zucchini Fritters
